How crazy is it that one small bottle of vinegar requires years of work, patience and passion? Little syrupy drops that create an explosion of flavour on your tongue halfway between salty and sweet.
We feel like
Balsamic Vinegar of Modena belongs to us a bit and we are really proud of it. Which is why we are really keen to get you acquainted with the ins and outs, its variety of flavours and production processes. So, what do you think?

You will be visiting two important local vinegar works where you will learn to distinguish PDO Traditional Balsamic Vinegar of Modena (protected designation of origin) from PGI Balsamic Vinegar of Modena (protected geographic indication) as well as gaining insight into the different production processes and specific uses for it. All the knowledge amassed by the vinegar-works owner, years spent ageing in barrels made of oak, chestnut wood or cherrywood…but we don’t want to give too much away.

Much to everyone’s delight, each tour will finish with a multi-sensory tasting session which starts by bringing your attention to the vinegar’s glossy appearance, then its scent and, last but not least, the way it feels on your palate. Yes, because you will only really understand the characteristics of each kind of vinegar by actually trying it yourself.

The day has reached an end. We would love you to stay longer because there are plenty of other delicious local specialities to share with you, but there isn’t time.
